Since coffee loses its flavour quickly, buy only what you need for
a short period of time and keep tightly sealed at room temperature
always. There are basically three degrees of roasts: Brown, dark
or black.
Brown
roasts
For those who prefer
delicate nuances, coffees roasted brown are recommended. Sweetness
and brightness are quite noticeable at this stage in which
natural sugars are developed and the full flavour and uniqueness
of each variety is revealed.
Dark
roasts
For those who prefer complex and spicy nuances
as well as beans having a slight film of oil on them, dark roasts
will please you! At this degree of roast beans begin to caramelize.
This is the ideal roast for espresso, whose unique flavour has an
attraction all its own.
Black
roasts
This particular roast reveals the
roastmaster's skill more than the variety's characteristics. Beans
have an oily sheen and a smoky flavour. They are low in acid, contain
less caffeine than lighter roasts and have a slight bittersweetness
sought by coffee aficionado.

Mocha Java
The first coffees blended were probably a mix of
wild beans from Yemen and Dutch-cultivated Javanese coffee. This
is a classic pairing. The full-bodied spiciness of Indonesia beans
is added to the complex, aromatic notes of Ethiopian Mocha Harrar

Grown in the foothills of mountain ranges and sorted
by hand, Supremo is a top grade including only extra large-sized
beans free of imperfection. It is sweet, with delicate aromatic

Blue Mountain Old Tavern Estate
After cupping this rare coffee, experts wrote: "Medium
bodied but expansively rich with complex mid to low notes. Cedar,
nuts and dry fruit in the aroma; sweet melodic fruit and floral
notes in the cup. A dash of astringency in the finish tightens the
fruit notes towards grapefruit.

AA Noir
Kenya has perfected the most sophisticated methods
for producing and processing coffee. The result is an exceptional
coffee, full-bodied, distinct and intense. $15.65 / lb.

Mandheling
Hand-picked, hand-tended and processed in the traditional
method, this coffee is rich, deep and complex with delicate acidity,
sweet earthy aroma and lingering finish. Roasting this coffee dark

Beausoleil, a signature blend
Joseph Broussard, know as Beausoleil, is an Acadian
hero from the 18th century. Having escaped the 1755 deportation,
he defended Fort Beauséjour during a British attack. He later
became a privateer in the Bay of Fundy and lived out the last part
of his life in Louisiana. Café Beausoleil is a bold mixture
of dark and black beans producing an intense and lively coffee.

A few centuries ago, Atlantic Canada was home to
pirates who roamed the seas from the East Coast to the Caribbean,
looting ships along the way. The Acadians called these pirates "forbans",
a term still in use today. This coffee is very strong and dark,
