At Café Cognito, you experience scrupulously roasted and blended coffees from Down East Coffee Roasters of Notre-Dame-de-Kent. Delivered practically every other day, impeccable freshness and quality are assured. Good fresh beans are extremely aromatic and with such a marvelous aroma, it is easy to see why coffee is so appreciated.

Café Cognito carries interesting, rare and unusual coffees for sale. Since coffee loses its flavour quickly, buy only what you need for a short period of time and keep tightly sealed at room temperature always. There are basically three degrees of roasts: Brown, dark or black.

Brown roasts… For those who prefer delicate nuances, coffees roasted brown are recommended. Sweetness and brightness are quite noticeable at this stage in which natural sugars are developed and the full flavour and uniqueness of each variety is revealed.

Dark roasts… For those who prefer complex and spicy nuances as well as beans having a slight film of oil on them, dark roasts will please you! At this degree of roast beans begin to caramelize. This is the ideal roast for espresso, whose unique flavour has an attraction all its own.

Black roasts… This particular roast reveals the roastmaster's skill more than the variety's characteristics. Beans have an oily sheen and a smoky flavour. They are low in acid, contain less caffeine than lighter roasts and have a slight bittersweetness sought by coffee aficionado.

Brown Roasts

Authentic Mocha Java
The first coffees blended were probably a mix of wild beans from Yemen and Dutch-cultivated Javanese coffee. This is a classic pairing. The full-bodied spiciness of Indonesia beans is added to the complex, aromatic notes of Ethiopian Mocha Harrar with outstanding results. $14.30 / lb.

Café des dunes
Long stretches of sand dunes with tall, wild grasses are a familiar sight along our Maritime shores. Many are now protected areas where nature lovers stroll while enjoying the bracing salty breezes under a warm and sunny sky. This blend is very smooth and silky. $14.30 / lb.

Columbia Supremo
Grown in the foothills of mountain ranges and sorted by hand, Supremo is a top grade including only extra large-sized beans free of imperfection. It is sweet, with delicate aromatic taste and medium body. $12.50 / lb.

Columbia SWP Decaf
This is a wonderful coffee with medium body, sweet and intense aroma, clear and clean flavour in the cup. A delight anytime. $14.30 / lb.

Peru Organic Fair Trade
It is one of the two fair trade coffees we carry because of its remarkable taste. It is greatly appreciated by those who enjoy a good coffee while wanting an organic and fair trade product. This coffee is naturally sweet, fragrant and delicate. $15.65 / lb.

Jamaican Blue Mountain Old Tavern Estate
After cupping this rare coffee, experts wrote: "Medium bodied but expansively rich with complex mid to low notes. Cedar, nuts and dry fruit in the aroma; sweet melodic fruit and floral notes in the cup. A dash of astringency in the finish tightens the fruit notes towards grapefruit. … a classic coffee in the sweet, low toned European mode." We say it's simply marvellous. $60.00 / lb. special order

Kauai Estate
This estate is ideally located for growing great coffee … in the warm Pacific sun, on volcanic earth, with abundant mountain rain, and cool trade winds. It is truly exotic and delightful! $20.50 / lb.

Aroma Nica La Union Estate
This exceptional coffee arrives directly from a farm in Nicaragua to Down East Coffee Roasters, is full shade grown as well as floral, fruity and sweet. It is exquisite as a brown roast and quite distinct as a black roast. $15.65/lb.

Café du mardi-gras, a signature blend
On this festive holiday just before Lent, Acadians traditionally served a rich meal topped off with sweets. We've created a complex mi-noir blend resulting in a strong brew with a unique chocolate-like flavour fit for a feast and perfect for café au lait. $13.85 / lb.

Café Moncton Blend, a signature blend
On opening day in July 1999, Mayor Murphy consumed the first cup of Café Moncton Blend. It has since become the favourite of Monctonians and visitors alike. $13.85 / lb.

Espresso
This bold espresso is a wonderful coffee, with a deep, dark and spicy flavour. It produces a beautiful aroma and a thick, rich crema with a smooth finish. This blend is also excellent brewed in any coffee maker, particularly the moka pot.

Black Roasts

Kenya AA Noir
Kenya has perfected the most sophisticated methods for producing and processing coffee. The result is an exceptional coffee, full-bodied, distinct and intense. $15.65 / lb.

Sumatra Mandheling
Hand-picked, hand-tended and processed in the traditional method, this coffee is rich, deep and complex with delicate acidity, sweet earthy aroma and lingering finish. Roasting this coffee dark brings out its finest qualities. $14.30 / lb.

Café Beausoleil, a signature blend
Joseph Broussard, know as Beausoleil, is an Acadian hero from the 18th century. Having escaped the 1755 deportation, he defended Fort Beauséjour during a British attack. He later became a privateer in the Bay of Fundy and lived out the last part of his life in Louisiana. Café Beausoleil is a bold mixture of dark and black beans producing an intense and lively coffee. $13.85 / lb.

Café des forbans, a signature blend
A few centuries ago, Atlantic Canada was home to pirates who roamed the seas from the East Coast to the Caribbean, looting ships along the way. The Acadians called these pirates "forbans", a term still in use today. This coffee is very strong and dark, a swashbuckling brew! It is particularly interesting in a French Press. $12.95 / lb.

Gayoland Organic Fair Trade
This is a very nice organic from Indonesia. This coffee boasts typical area light spice and tropical fruit with soft dryfinish. $15.65 / lb.
